Out Grilled Blackened Chicken Breasts are a simple and flavorful dish, known for its spicy, smoky crust and tender, juicy interior. This technique involves seasoning the chicken breasts with a robust blackening rub before it hits the grill. The high heat of the grill not only cooks the chicken thoroughly but also gives it a charred exterior that’s packed with flavor. Whether you’re an experienced grill master or just getting started, this recipe offers a straightforward approach to a delicious meal.

Grilled Blackened Chicken Breasts

A good blackening seasoning is worth its weight in gold, so when you find one you know you like – stock up. You’ll be using it a lot.

Blackening originated with Cajun and Creole cuisine, in Louisiana. Essentials are a good dose of blackening rub and a bit of char on the meat, whether from a cast iron pan or a grill. The combination really works well together, especially on chicken and fish.

We use Blackening seasoning on a number of dishes, but some of my favorites are our Blackened Fish Tacos, Blackened Shrimp Caesar Wrap, and this Blackened Pork Chops recipe.

What kind of blackening rub is best?

We’ve used a lot of blackening rubs over the years, but recently we discovered Spiva Cooking, a local spice company, and their Blackening Rub, Black Gold, went right to the top of the list. Pick some up, and grab some others to try while you’re there! It is freshly packed, with no preservatives or fillers, and every variety we’ve tried has been incredible.

How to make Blackened Chicken Breasts

Wondering what you’re getting yourself into when you make this dish? Here’s a quick overview of the process! Make sure you follow the instructions at the recipe card at the bottom of the post while you’re cooking.

  • Preheat
    Preheat your grill to 375°F to ensure it’s ready for the chicken.
  • Oil
    Brush the chicken breasts with olive oil on both sides to help the seasoning stick and to prevent sticking to the grill grates.
  • Season
    Season the chicken liberally with the Cajun blackening rub for a spicy, flavorful crust.
  • Grill
    Grill the chicken on the grates for 8-10 minutes, then flip and continue cooking until the internal temperature reaches 165°F, ensuring it’s perfectly cooked and juicy.
  • Rest
    Rest the chicken for 5-10 minutes after grilling, tented with foil, to allow the juices to redistribute, then slice against the grain and serve hot.

Serve next to a plate of Jambalaya!

Can I prepare this dish ahead of time?

Yes, you can season the chicken up to a day in advance and store it in the refrigerator until you’re ready to grill.

How should I store leftovers?

Store in an airtight container in the refrigerator for up to 3 days.

Can I use a different type of rub?

Absolutely. Feel free to use any Blackening spice blend you enjoy or have on hand. You can use any rub you want with this basic recipe. I won’t be “blackened” if you use something else, but I bet it’ll still be delicious!

What if I don’t have a grill?

You can cook the chicken in a cast-iron skillet over medium-high heat to mimic the grilling effect.

  • 1 1/2 tablespoons blackening rub
  • 2 tablespoons olive oil

Instructions

  • Preheat your grill to 375°F.
  • Brush the chicken breast with oil on both sides.
