Our recipe for Traeger Disco Tots are a fun play on the “disco fries” trend that has been sweeping the internet. Crunch tater tots are drenched in beef gravy and then covered in melted mozzarella cheese for an incredible snack that'll have everyone grabbing a fork!

Traeger Disco Tots
If you've ever had a really well-made poutine, you're going to find this recipe really familiar. Disco fries originated in the 1970s in New Jersey, and heavily borrowed from their neighbors to the north. Proper squeaky cheese curds weren't so readily available down in Jersey, however, so in comes the mozzarella cheese.
This version uses tots instead of fries. Not only do they tend to crisp up better when cooked in the Traeger than traditional fries, but they also do a much better job of delivering copious amounts of gravy into your face, which is always a bonus when we're talking about gravy fries.

How To Make This Recipe
This is just the overview so you can see what you're actually getting into here. When you are cooking, you'll want to use the full recipe at the bottom of the page.
- Preheat – Fire up your grill and get it HOT. We're talking 400-450°F.
- Cook The Tots – Put the tater tots on a baking sheet and place the sheet into the preheated pellet grill. Let cook for about 10-15 minutes, and then give the sheet a good shake to rotate the tots so the other side can brown.
- Heat The Gravy – While the tots are cooking, heat the gravy in a saucepan on the stovetop until it is lightly simmering. Stir it frequently so it doesn't scorch.
- Cheese Time – Once the tots are crisp, heap them up with lots of shredded mozzarella cheese. We're talking an almost comical amount, but if you aren't such a huge fan of cheese you can use your best judgment.
- Melt The Cheese – Put the pan back in the grill long enough for the cheese to get good and melted.
- Gravy – Next, you're going to pour all of that gravy over the top of it all. Pro tip, only add gravy to what you KNOW will be eaten in the next little while. Otherwise no matter how crispy and cheesy those tots were, they'll be soggy. So, if you're planning on leftovers, hold off on the gravy for that portion.

Sure! That's the more traditional way to do it. I prefer tots, but as with almost all of my recipes, I'm not the boss of you and encourage you to experient and sub in your favorites.
Beef gravy is by FAR the best, but you could easily sub in poultry gravy here.


Pulled Pork Poutine
This hearty, filling side dish is perfect to serve at your next get-together. This is a play on Canadian poutine, originating in New Jersey in the diner scene.
Ingredients
- 32 ounces frozen tater tots
- 4 cups shredded mozzarella cheese
- 16 ounces beef gravy
Instructions
- Preheat your grill to 400-450°F.
- Place the tots onto a grill-safe baking sheet and place into the preheated grill. Cook for 15-20 minutes before giving the sheet a good shake to rotate the tots.
- While the tots are getting crispy, heat the gravy on the stovetop, and shred your cheese (if not using pre-shredded).
- After the tots are crisp, cover with the shredded mozzarella and put back into the grill to let the cheese melt.
- Once the cheese is melted, add the gravy to whatever portion you expect will be eaten immediately.
