Mexican Chicken Pizza
We love making Mexican-inspired dishes at home, and one of my favorites is our play on the Taco Bell Mexican Pizza. They are easy, delicious, and can be customized according to your own tastes and preferences.
I usually use whatever my current favorite Mexican BBQ rub is, but if you don't have one laying around a good homemade option would be to use my homemade taco seasoning on the chicken. Just omit the masa from the mix because we don't need a thickener for this recipe.

- Corn Tortillas – You can use flour if that's what you have, but it won't be as crispy as corn. I really like using the raw corn tortillas they have available in some grocery stores now.
- Avocado Oil – My favorite oil! High smoke point, and a better alternative to seed oils.
- Chicken Breasts – Cut the chicken breasts into strips, and then into bite-sized chunks.
- Mexican Rub – Whatever kind is in your pantry will do!
- Black Beans – Drain the beans well before adding to the griddle. If you don't have black beans, pinto works, too. You can use the seasoned kind, if you prefer, or just toss some Mexican seasoning onto them while you're cooking.
- Shredded Cheddar Cheese – Mexican blend is what I usually use, but any kind of cheddar works well, too!
- Salsa – I prefer verde salsa, but whatever your favorite is works well!
- Sour Cream – Or crema. Whatever you have available. A mix of sour cream, lime juice, and cilantro would also be amazing.
- Cilantro – For garnish. Feel free to omit if you have haters in the house.

How To Make This Recipe

- Heat The Griddle – Preheat your griddle over medium heat.
- Season The Chicken – Season the sliced chicken breast with the Mexican rub.
- Oil And Set Up Zones – Spread the oil over the griddle, then place tortillas on one side, beans on another, and chicken on the remaining space.
- Cook Chicken And Warm Tortillas – Cook the chicken, flipping occasionally, until no pink remains. Flip the tortillas once, then add cheese to 4 tortillas.
- Assemble, Crisp, And Serve – Top the cheese tortillas with beans and chicken, add more cheese, then cap with another tortilla. Cook a couple minutes per side, flipping once, until crisp. Garnish with salsa, sour cream, and cilantro, then slice into quarters.

Yes, but it won't be as good as if you eat it fresh off the griddle. The fun part about Mexican Pizza is the crunch, and you'll lose some of that if you cook and then reheat.
Yes! These pizzas are so versatile. Add in some grilled jalapenos. Use steak or ground beef instead of chicken. You can even use leftover shredded beef or pork, too. Add whatever toppings you prefer and really make these your own!

Blackstone Mexican Chicken Pizza
These Mexican Chicken Pizzas are simple to throw together and are perfect for game day or whenever you need a quick, delicious meal!
Ingredients
- 8 corn tortillas
- 3 tablespoons avocado oil
- 2 chicken breasts, sliced into strips
- 2 tablespoons Mexican Rub
- 1 cup black beans
- 2 cups shredded cheddar cheese
- 1/2 cup verde salsa
- 1/2 cup sour cream
- 1/4 cup chopped cilantro
Instructions
- Preheat your griddle over medium heat.
- Season the sliced chicken breast with the Mexican rub.
- Spread the oil out over the griddle surface.
- Add the tortillas to one side of the griddle, the beans on another part, and the chicken on the remaining portion of the griddle.
- Cook the chicken, flipping occasionally, until no more pink remains.
- Flip the tortillas once, and then add some cheese to 4 of them.
- Add beans and chicken on top of the cheese-covered tortillas.
- Add the remaining cheese on top of the chicken, and top with another tortilla.
- Let the pizzas cook for a couple of minutes before flipping. Allow the second side to crisp before transferring to a platter.
- Garnish with salsa, sour cream, and cilantro before slicing into quarters and serving.
