Ingredients

Wings

Sauce

  • 2 ½ cups chicken stock
  • 1 can sweetened Thai coconut milk
  • 5 tablespoons Thai red curry paste
  • 1 tablespoon minced garlic or garlic paste
  • 1 tablespoon lemongrass paste
  • 2 teaspoons fish sauce
  • 1 teaspoon minced ginger or ginger paste

Stir Fry

  • 1 tablespoon oil
  • 1 bell pepper
  • ½ pound baby bok choy
  • 1 medium onion
  • 1 large carrot
  • ¼ teaspoon salt
  • 1 tablespoon crushed garlic
  • 2 tablespoons chopped cilantro
  • 4 cups cooked white rice

Instructions

  1. Preheat the grill to 375°F.

  2. Season the wings with the red curry powder, salt, garlic powder, onion powder, and cayenne.

  3. Add the seasoned wings to the preheated grill, and let cook for about 7-8 minutes per side. Or until the internal temperature reaches 165°F.

  4. While the chicken it cooking, make the sauce by mixing all of the sauce ingredients together in a pan. Bring to a simmer, and let simmer over low heat.

  5. In a wok, heat the olive oil over medium-high heat. Stir fry the bell pepper, bok choy, onion, and carrot until tender-crisp.

  6. Add the crushed garlic and sauté for another 30-60 seconds.

  7. Add the vegetables to the sauce.

  8. When the chicken is done cooking, toss them in with the sauce and vegetables and serve hot over rice.
