  • 4 mini cucumbers sliced
  • 1 tablespoon kosher salt
  • 1/4 cup rice vinegar
  • 2 tablespoons soy sauce
  • 1/2 teaspoon sesame oil
  • 1 teaspoon light miso
  • 1/2 teaspoon toasted sesame seeds
  • 1/2 teaspoon gochugaru optional for spice
