It’s great for weeknights or backyard gatherings, fast to prep, fast to cook, and big on flavor.

Traeger Grilled Skirt Steak
Skirt steak is one of the most flavorful cuts of beef available, especially when grilled hot and fast. Its thin, long shape allows for a beautiful crust while keeping the inside tender and pink. Don’t skip the rest before slicing. It is essential for keeping all the juices in the meat where they belong and not on your cutting board.
I love using our Traeger grill for steak. It makes it easy to maintain a steady high heat, which is crucial for this quick-sear method. The light smoke from the wood pellets enhances the steak’s natural richness without overpowering it. Aim for medium rare or medium to keep the texture right. You don’t want to overcook this cut.
We use my new favorite thing in the spice cupboard, our own OWYD SPG! It features a smoked salt along with the pepper and garlic, and is beef’s best friend. It complements the meat without masking it.

Our new, custom, Smokey SPG is my MOST USED SPICE blend because if I put anything on everything! It is salt, pepper, garlic. Every time. Buy this before our first run sells out!
