There’s no better side dish than a bubbling pan of cheesy potatoes, and this Traeger Hash Brown Casserole is at the top of my list. Simple, delicious, and goes well with so many different mains. This one puts Cracker Barrel to shame.

I love a good side dish that doesn’t take all day, and this one is so easy, I’d trust my 12 year old to make it. We use dried hash browns in this recipe because they are shelf stable, we always have some in the pantry, and they make a great pan of potatoes whether you are frying them up for crispy breakfast hash browns or turning them into this savory dinner side.
You don’t need anything fancy to pull this off. Just hash browns, a few dairy staples, and a can of soup. If you’ve got 10 minutes to stir it together, your Traeger will handle the rest. It’s a set-it-and-forget-it kind of dish with a ton of payoff.
This is a hit with adults and kids, picky eaters included. It’s hearty enough to pair with smoked meats but still holds up on its own as a potluck-style main.
Perfect for holidays, family dinners, or when you’re feeding a crowd and want something easy and satisfying that everyone’s familiar with.
