Sometimes I lament the end of fall and winter cooking, and all of the soups, stews, casseroles, and meat-and-potatoes meals that come along with it. Traditionally, those types of meals are my favorite, so when the weather turns warm and the sun starts shining, a tiny part of me is disappointed. Not my vitamin D levels, or my transparent skin. Not my eyeballs either who are so sensitive to sun come March and April that I basically live in sunglasses. But some part of me.
Then I remember how amazing summer bbq foods are, and specifically things like this smoked chicken salad. Pasta salads, potato salad, the best brats, smoked baked beans, my Blackstone sees the light of day again and all of the stir-fry, smash burgers, and big fat tomahawk steaks along with it.

How to make Smoked Chicken Salad

Smoked Chicken Salad Sandwich
This delicious Smoked Chicken Salad Sandwich is simple to throw together, and a perfect way to use up those Traeger chicken leftovers!
Ingredients
- 4 cups diced smoked chicken, white and dark meat
- 1 cup mayo
- 1/2 cup diced celery
- 1/2 teaspoon celery salt
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 teaspoon granulated garlic
- 3 green onions, whites and greens, diced
- 1 teaspoon dijon mustard
- 1 teaspoon lemon juice
Instructions
- Mix together all of the sauce ingredients with a whisk until well combined.
- Gently mix in the diced smoked chicken.
- Refrigerate for a few hours to let the flavors meld.
- Serve on toasted buns or in lettuce cups.
