Hamburger Gravy with Creamy Garlic Chive Pasta
I might have made this during the height of summer for you all, but at its core this is such a fall and winter meal. Hearty, warm, filling, and easy to throw together, this one is perfect for a cold night where you want something comforting and homey. It is also fairly budget-friendly with a lot of ingredients that you probably already have on hand, and some of my secret weapons that help make many of my recipes pretty amazing.
I put this solidy alongside recipes like our Traeger Pot Roast, Prime Rib Beef Barly Soup, and Chicken Marsala on the “comfort food scale”. Stuff you’d make on a weekend or for company when you want to show off a little but also don’t want to be standing over the stove for hours.
You can serve this with some corn on the side or even mixed into the whole ordeal if that’s your think, or if you want something more fresh and green, a salad with a nice Greek Vinaigrette would go a long way towards breaking up the creamy, beefy bites you’re about to enjoy.
Is this dish a little extra? Sure. Do we care? Not even a little bit.

How to make Hamburger Gravy with Garlic Chive Pasta

Boil
Put a big pot of well-salted water on to boil.

Cook
Brown the mushrooms in the butter. Cook the ground beef after you season it with salt, pepper, and garlic powder. Drain the fat.
Stir in the flour, add the water and au jus. Simmer until thickened. Add the sherry and kitchen bouquet. Add the mushrooms back into the pot. Simmer over low.

Noodles
When the water boils, add the noodles and cook according to package directions. Drain.
Toss with the cream cheese, sour cream, and half and half while the noodles are hot.

Enjoy
Serve the hamburger gravy over the top of the creamy noodles.

What’s the best way to store and reheat the leftovers?
I like to keep the leftovers separate and reheat them separately in the microwave before serving leftovers. They keep well for 2-3 days in the fridge, and make a great make-ahead lunch to pop in the microwave.
Can this dish be made in advance?
Sure! But if you’re planning on making it ahead for a reheat I’d plan on purposely undercooking the noodles by a minute or two to keep them from getting too mushy. You could put the hamburger gravy in one half of a preheated 9×13″ pan and the noodles in the other side, cover it with foil, and transport them to your potluck. A Casserole Crock Pot would also do really well for this.
This dish would be great to bring over to a friend or family’s house too if they just had a baby, if someone is sick, or if you just want to bless them with a hearty and delicious meal.
Are there any recommended substitutions or additions?
A diced-up onion would be great to toss in along with the ground beef. I would’ve, but I was out of onion when I whipped this up.
Don’t have Johnny’s Au Jus Powder? You can sub in regular beef broth instead.
Can’t find the garlic chive cream cheese? You can make your own with some fresh chives and garlic powder. I really like the Toasted Garlic Granules from Spiceology.

Hamburger Gravy with Sour Cream and Chive Noodles
Hearty delicious homemade hamburger gravy is heaped on top of a pile of creamy garlic and chive noodles for a stick-to-your-ribs meal that'll leave everyone satisfied.
Ingredients
Hamburger Gravy
- 8 mushrooms, sliced
- 2 tablespoons salted butter
- 1 pound hamburger (80/20 or 85/15 ideally)
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 teaspoon garlic powder
- 1 teaspoon chopped garlic
- 3 tablespoons flour
- 2 cups water
- 2 teaspoons Johnny’s AuJus powder*
- 1/8 cup cream sherry
- 1 teaspoon kitchen bouquet (optional)
- 1 teaspoon chopped parsley
- 2 sprigs fresh thyme
Creamy Garlic Chive Noodles
- 2 cups uncooked extra wide egg noodles
- 1/4 cup garlic chive cream cheese**
- 1/4 cup sour cream
- 1/4 cup half and half
- 2 teaspoons garlic onion sour cream rub (optional)
Instructions
- Put a large pot of well-salted water on the stovetop to boil.
- In a large high-sided pan, put the sliced mushrooms and butter over medium-high heat. Cook on both sides until browned. Remove from the pan and set aside.
- Put the hamburger in the pan over medium-high heat and sprinkled with the salt, pepper, and garlic powder. Brown the meat.
- Remove all the excess fat and liquid from the pan with a spoon.
- Stir in the flour to the ground beef until it is no longer visible and there are no lumps of flour.
- Add the water and Johnny's Au Jus powder. Stir and simmer over medium heat until the mixture is slightly thickened. Add the sherry and kitchen bouquet (if using), and stir until well-combined.
- Add the parsley and thyme and reduce the heat to low for a low simmer.
- When the water is boiling, add the egg noodles and cook according to package directions.
- Drain, and stir in the cream cheese, sour cream, and half and half while the pasta is still piping hot. Mix in the Garlic, Onion, Sour Cream seasoning blend, if using.
- Serve the hamburger gravy hot over the noodles.
Notes
*You can sub in 2 cups of beef broth instead of the Johnny's Au Jus powder and water if you'd like
**You can use regular cream cheese if you can't find garlic chive and mix in 3 tablespoons fresh chives and 1/2 teaspoon garlic powder
