How to make Grilled Skirt Steak Street Tacos

Marinate
Mix the marinade ingredients in a large freezer baggie or glass storage container. Put the meat in, coat both sides and let marinate for at least 4 hours. Overnight is better.

Preheat
Preheat the grill to 425°F. Remove from the marinade and pat the steak dry. Season with the lime salt.

Grill
Place the seasoned steak on the grill and let cook for 4-5 minutes per side, until the steak’s internal temperature reaches 130°F (or to your own desired level of doneness). Always cook to temp, and remember that thin steaks like skirt cook quickly!

Remove from the grill and let rest for 5-10 minutes, tented with foil. Slice across the grain into thin strips.

Can this recipe be prepared in advance?
Sure! It’ll be the BEST right after it comes off the grill, but this is a great recipe to prep and make on the weekend for easy weekday lunches. Hello, taco salads!
What’s the best way to store leftovers?
If I make this in advance, I like to store the leftovers whole and slice right before reheating and serving. If you’ve already sliced it, that’s okay, too. Just toss it in an airtight container.
Are there any recommended substitutions or additions?
You can throw in a couple of jalapenos for a kick in the marinade. A slug or two of beer is also a welcome addition. Get creative with your taco toppings, too. Now’s the time to experiment!

Grilled Skirt Steak Tacos
Our simple grilled skirt steak tacos are great for any night of the week! The flavorful marinade is easy to throw together, and makes the meat taste amazing!
Ingredients
Steak
- 2 pounds skirt steak
- 2 teaspoons lime salt (optional)
Marinade
- 2 limes, juiced
- 1 orange, juiced
- 1 bunch cilantro, chopped
- 3 cloves garlic
- 1 tablespoon olive oil
Tacos
- tortillas, corn or flour
- 1 small onion, chopped
- cilantro, chopped
- hot sauce
Instructions
- Combine the marinade ingredients and put the steak in. Refrigerate for at least 4 hours or overnight.
- Preheat your grill to 425°F.
- Remove the steak from the marinade and pat dry. Season with the lime salt.
- Place the steak on the preheated grill. Let cook, flipping after 4-5 minutes, and let cook until the internal temp reaches 125-130°F.
- Remove from the grill and let rest, tented with foil, for around 10 minutes.
- Slice across the grain and load up into tortillas. Top with the chopped onion and cilantro.
