How to make a Prime Rib Dip

Slice
Thinly slice your cooked prime rib. Use the sharpest knife you have and make the thinnest slices possible. It is okay if it is more “shaved” than sliced. A GOOD electric knife works well for this to, as does a meat slicer.

Heat Au Jus
Heat your Au Jus in a pot on the stove until it is simmering.

Toast
Slice your rolls and toast the insides.

Build ’em
Melt two slices of cheese on each roll. Add the sliced beef to the simmering au jus. Pile it on the rolls.

Enjoy
Serve hot with an extra side of au jus for dunking.

What’s the best way to store leftovers?
Keep these sandwiches disassembled if you are going to have more than you can eat in a sitting. Assemble right before you eat. The shaved meat will keep well for 3-4 days.
What can you use to make the au jus?
We love the Johnny’s Au Jus mix around here. I keep a bottle of it around basically always for soups, stews, gravy, and au jus. If you don’t have any, you can use the drippings from your rib roast.
What about the sub buns?
We usually use hoagie rolls from the grocery store for French dips, but once in a while I’ll get ambitious and make my own homemade rolls.

Prime Rib French Dips
This easy Prime Rib French Dip is perfect for a lunch or dinner, and is the perfect way to use up leftover prime rib!
Ingredients
- 3 pounds medium-rare prime rib
- 2 cups au jus
- 6 sub buns
- 12 slices white american cheese
Instructions
- Take your prime rib and thinly slice it.
- Heat up the au jus on the stove until it is simmering.
- Slice the buns in half and toast the cut side until light brown.
- Melt 2 slices on each piece of bread under the broiler.
- Place the thinly sliced meat into the simmering au jus. Leave in for about 30 seconds before placing the meat into the sub buns.
- Serve the sandwiches with an extra side of au jus for dipping.
