Starbucks Egg Bites with Jalapeño

Starbucks Egg Bites with Jalapeño

Egg bites are the perfect make-ahead breakfast! Make a double batch on the weekend and have a quick, delicious start to your day all week long.

Prep Time 5 minutes
Cook Time 25 minutes
Total Time 30 minutes

Ingredients

  • 6-8 extra large eggs
  • 1/4 cup heavy whipping cream
  • 1/4 teaspoon salt
  • 3 tablespoons butter
  • 1 teaspoon Mexican style rub
  • 4 ounces shredded cheddar cheese
  • 1 medium jalapeño, seeded and chopped
  • 4 ounces crumbled bacon

Instructions

  1. Preheat your oven to 350°F.
  2. Fill a 9x13 cake pan with 1” of water and put it into your oven.
  3. Cook the bacon in a small sauté pan over medium heat. Drain the fat and set aside to let cool. Chop into bite-sized pieces.
  4. Crack the eggs into a bowl. Add the cream and salt and mix thoroughly with a fork or whisk.
  5. Melt the butter in the microwave and pour into the egg mixture. Stir to combine.
  6. Lightly spray you egg mold with cooking spray.
  7. Pour the egg mixture into the egg mold; leaving a 1/4” of space at the top.
  8. Sprinkle some of the chopped jalapeño into each egg mold.
  9. Sprinkle a little of the rub on top of each egg mold.
  10. Sprinkle a generous amount of the shredded cheese on top of each egg mold.
  11. Place the egg mold into the water bath in the oven and let cook for 25-30 minutes.
  12. Take the egg mold out of the oven and let cool for 2-3 minutes.
  13. Slide a butter knife all the way around the edges of each egg mold to make it easier to remove from the egg bites.
  14. When the egg bites are removed from the mold, you can eat them as is or add any condiments you wish.
