Chicken Caprese FAQ
Can this recipe be made in advance?
I wouldn’t suggest making this recipe ahead of time. Chicken breast is best served straight away after it is cooked, and the diced tomatoes don’t hold up very well to refrigeration either.
What kind of tomatoes work best for this recipe?
We used Roma tomatoes. They are meaty and delicious. Whatever tomatoes are best will be whatever is the freshest and ripest, however. Beefsteak would be delicious too.
Substitutions and Variations
Balsamic reduction is a great sub in for the regular balsamic here. It adds some extra sweetness, and I love the thicker texture too. This dish would also be wonderful served over a bed of pasta or rice, or made into a sandwich.
