How To Make This Recipe

- Preheat Grill – Set to 375°F.
- Season Chicken – Coat with 1 tablespoon olive oil, then season with ½ teaspoon salt and onion powder.
- Grill The Chicken – Cook over medium-high heat for about 6 minutes per side, or until internal temp hits 165°F. Let rest when done.
- Make The Topping – Dice tomatoes and chop basil. Toss with remaining olive oil, granulated garlic, and ½ teaspoon salt.
- Top And Serve – Spoon the tomato mixture over grilled chicken and drizzle with balsamic vinaigrette.

Recipe FAQ
I wouldn't suggest making this recipe ahead of time. Chicken breast is best served straight away after it is cooked, and the diced tomatoes don't hold up very well to refrigeration either.
We used Roma tomatoes. They are meaty and delicious. Whatever tomatoes are best will be whatever is the freshest and ripest, however. Beefsteak would be delicious too.
Balsamic reduction is a great sub in for the regular balsamic here. It adds some extra sweetness, and I love the thicker texture too. This dish would also be wonderful served over a bed of pasta or rice, or made into a sandwich.

Delicious grilled chicken breasts seasoned and topped with a zesty tomato-basil mix, finished with a balsamic glaze.
Ingredients
- 2 tablespoon olive oil, divided
- 2 pounds boneless skinless chicken breast
- 1 teaspoon salt, divided
- 1 teaspoon onion powder
- 4 Roma tomatoes
- 1 tablespoon chopped basil
- 1/2 teaspoon granulated garlic
- 1 tablespoon balsamic vinaigrette
Instructions
- Preheat your grill to 375°F.
- Coat chicken breasts with 1 tablespoon olive oil.
- Season with 1/2 teaspoon salt and onion powder.
- Grill on medium-high heat for 6 minutes per side. Use a temperature probe to check the internal temperature, and cook until the internal temperature reaches 165°F. Adjust your cook time accordingly.
- Remove chicken from grill, and let rest.
- Chop basil leaves and dice the tomatoes into 1/4" pieces.
- Toss the basil, garlic powder, 1 tablespoon olive oil, and 1/2 teaspoon salt with tomatoes.
- Top chicken with tomato mixture. Drizzle with balsamic vinaigrette.
