Traeger Smoked Chicken Breast Burrito Bowl
I love a good burrito, but sometimes I want to skip the tortilla and make it a little more healthy. Less carbs, more protein, all the toppings, gimmie. I could eat Mexican food 4 times a week and not get sick of it, which is a good thing since this particular recipe is SO simple to make, and is perfect to put into ready-made lunches for your whole week.
We used chicken breast for this recipe and it worked so well. If you’d rather use chicken breast tenders or even chicken thighs, those would also be great options.
I love the smokey flavor in the chicken that comes from cooking it over a real fire at such a low temperature. If you aren’t as big of a fan of smoke or don’t have a smoker, this recipe can also be made on any other type of grill you’ve got. Just cook until the internal temperature reaches 165°F and you’ll have a delicious chicken breast for your burrito bowl.

How to make Smoked Chicken Burrito Bowls

Preheat
Fire up the smoker and get it going to 200°F.

Season the chicken generously with salt and pepper, Tajin, and garlic and onion powders.

Can this dish be made in advance?
Yes! We love doing a big batch of these at the beginning of the week to have easy lunches or no-think dinners all week. Feel free to double or triple this batch for extras!
Are there any recommended substitutions or additions?
Sure! You can sub in your favorite Mexican seasoning if you don’t have Tajin. I love Spanglish Asadero, and there are a ton of other options too that would taste great!
What’s the best way to store and reheat leftovers?
We like storing the whole chicken breasts in freezer baggies in the fridge. Dice it right before serving. Reheat in the microwave or back in the grill if you don’t have a microwave.

Smoked Chicken Breast Burrito Bowls
These simple smoked chicken burrito bowls are super easy to make and the chicken stays so moist and flavorful!
Ingredients
- 2 chicken breasts
- 1 tablespoon olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 teaspoon Tajin seasoning
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
Burrito Bowls
- 2 cups cooked white rice
- 1 cup black beans
- 1 large tomato
- 3 tablespoons sour cream
- 4 tablespoons salsa
- 2 tablespoons Cotija cheese
- 1 tablespoon chopped cilantro
Instructions
- Preheat your grill to 200°F.
- Brush the chicken with olive oil and season with salt, pepper, Tajin, garlic powder, and onion powder.
- Place the chicken on the smoker and let it cook for around 45minutes, or until your chicken breast reaches 165°F internal temperature. How long it'll take depends on the thickness of your chicken breasts.
- Remove from the grill and let cool for a while before cutting into cubes.
- Warm up your rice and black beans and put into the bottom of four bowls. Top with the cubed chicken and all the other ingredients.
- Enjoy hot!
