They are SO simple, but interesting and surprising in flavor with all of the different sausages melding together with the smokiness of the grill and finished with BBQ sauce. Anticipate seeing a lot of finger licking and napkins.
These Smoked Sausage Bites would be a wonderful appetizer to serve at just about any gathering. They are easy to eat if you provide toothpicks, they keep for long periods of time and don’t lose quality if they are over a warmer or in a crock pot. You can also make these a day or two in advance and then just reheat them when it is time to serve.

Most of our grocery stores carry kielbasa and andouille sausage now, which is great because it’s so nice to have a variety of choices when it comes to cooking. It used to be that smoked sausage or polish sausage were our only choices. Now, things have changed, tastes and flavors have broadened, and we are all reaping the benefits.
If your local grocer does not offer any other varieties to choose from, visit your local butcher or meat shop, as most of them have also gotten on the flavor train and offer up a myriad of sausages to choose from.

Smoked Sausage Bites
Simple Smoked Sausage Bites feature a variety of sausages browned on a flat top or in a cast iron pan, and then smoked on a pellet grill with barbecue sauce.
Ingredients
- 3 pounds smoked sausage, sliced
- 1 tablespoon vegetable oil
- 3 cups barbecue sauce
Instructions
- Slice the sausages and heat a cast iron pan or a flat top griddle over high heat. Brush a thin coat of vegetable oil or cooking spray on the pan, and toss the sliced saucsage in.
- Brown for 3-5 minutes on both sides.
- Preheat your Traeger or other pellet grills to 350°. Place the browned sausages into a grill-safe container, and cover with barbecue sauce.
- Place onto the grill, uncovered, and grill for 30 minutes over indirect heat.
- Remove and serve with toothpicks to a hungry crowd.
