Eggs are one of the things that new griddlers struggle with the most. We get questions all the time about how to make great eggs on the Blackstone, and while there are many different paths to get to a good end result, this method is my current favorite.
Not only is it the easiest method I've found, but it also doesn't require any molds, silicone rings, putting a pan on the griddle, or anything like that. A big part of the appeal of griddle cooking is the easy clean-up and not dirtying every single dish in your house for one meal. That means for me when I'm choosing extra dishes to dirty for any particular thing, they better be necessary and useful.

Fluffy Blackstone Scrambled Eggs
These fluffy scrambled eggs are cooked on the griddle and don't require any special tools, molds, or anything else to get a pile of scrambled eggs that are delicious and the perfect texture.
Ingredients
- 6 large eggs
- ¼ cup whole milk
- ½ teaspoon salt
- ½ teaspoon pepper
- 3 tablespoons butter
Instructions
Preheat your griddle over low heat.
Whisk together the eggs, milk, salt, and pepper.
Squirt a little water on the griddle surface. Let it bubble a bit and the scrape away from the cooking surface. This cools down the griddle a bit so the eggs don't cook too fast.
Melt the butter on the griddle. Pour about ¼ cup of the eggs onto the melted butter and stir with a spatula. Once they are slightly set, pour a little more eggs right on the top of the other eggs.
Continue to pour, stir and flip, and pour more eggs on top of the other eggs, slowly, until all of the egg is on the griddle. This helps build up your eggs so they don't spread too much or brown on the griddle surface.
Once the eggs are set you can remove from the griddle and serve hot.
