How to make Smoked Avocado Toast

  • Smoke
    Smoke the halved avocados at 165 degrees for 30-40 minutes.
  • Mash
    Mash the smoked avocado flesh with salt, pepper, garlic, and onion powder.
  • Toast
    Toast the sourdough slices and prepare poached eggs in simmering water.
  • Assemble
    Spread the avocado mixture onto each toast slice, and top with a poached egg.

Ingredients

  • 2 large ripe avocados
  • 4 slices sourdough bread
  • 1/2 teaspoon salt
  • 1/2 teaspoon granulated garlic
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1 Anaheim pepper thinly sliced
  • 4 eggs
  • 1 teaspoon fresh cilantro
  • 1 teaspoon Everything Bagel Seasoning

Instructions

  • Cut the avocados in half and remove the pit.
  • Place on your smoker set at 165 degrees.
  • Leave on the smoker for 30-40 minutes.
  • Remove from the smoker, scoop out the flesh with a spoon, and put it into a bowl.
  • Add in the salt, pepper, garlic, and onion powder.
  • Mash the avocados and dry ingredients with a fork until only very small chunks of avocado are in the mix.
  • Toast your sourdough slices and then cut off the edges of the crust (or not – if you like crust.)
  • Put a small pot of water on your stovetop and bring to a simmer.
  • Crack your eggs into the simmering water and poach them.
  • Cut your sourdough toast slices in half and spread some avocado mixture onto each one.
  • Lay a poached egg on top of each piece of toast.
  • Sprinkle the everything bagel rub on top of the eggs.
  • Garnish with the sliced pepper and cilantro.
