How to make Grilled Chicken Thighs

  1. Preheat the Pellet Grill: Set your pellet grill to 375°F.
  2. Season the Chicken: Evenly coat all sides of the chicken thighs with the OWYD Roasted Chicken Rub.
  3. Grill Skin-Side Down: Place the chicken thighs skin-side down on the preheated grill. Cook for 20-25 minutes until the fat renders and the skin is browned.
  4. Flip and Continue Cooking: Turn the chicken thighs over and cook until the internal temperature reaches 165°F.
  5. Rest and Serve: Remove the chicken from the grill and let it cool for 10 minutes before serving. For extra crispy skin, optionally crisp the thighs in a skillet with hot oil for 2-3 minutes.

  • Preheat your pellet grill to 375°F.
  • Evenly coat all sides of the chicken thighs with the rub.
  • Place skin-side down into the pre-heated grill.
  • Let cook for 20-25 minutes, or until the fat has rendered, and the skin is browned.
  • Flip, and continue to cook until the internal temperature reaches 165°F.
  • Remove from the grill and let cool for 10 minutes before serving.
  • Optional: Love crispy chicken skin? Preheat a few tablespoons of oil in a skillet on the stovetop over medium-high heat. Place the chicken thighs skin-side down into the hot oil for 2-3 minutes after grilling to further crisp the skin.
