  • 3 pound rack of lamb
  • 2 tablespoons olive oil
  • 1/4 cup Mediterranean Rub


  • Preheat your pellet grill to 200°, sprinkle the rack of lamb with the Mediterranean seasoning, and place your lamb on the grill.
  • Place the lamb on the grill and smoke for 1 hour.
  • Turn up the grill to 400°F.
  • Continue cooking until the internal temperature reaches 145°F, turning over a few times during the cook. It should take about 15-20 minutes, but this will depend on the size of your racks, the external temperature, and how often you open your grill during the cooking process.
