Ideally, you won’t have leftovers. Scallops are really meant to be eaten as soon as they are cooked. If you do make a few too many, store in an airtight container in the refrigerator for up to 2 days.

Can I reheat this dish?

Yes, but gently and preferably on a skillet with butter over low heat to avoid overcooking. An Air Fryer can also be used. I recommend putting the scallops in a foil boat with some butter for this method as well, and air frying at a relatively low temp.

  • 1 tablespoon sea salt
  • 4 tablespoons avocado oil

Instructions

  • Preheat your griddle over medium high heat.
  • Dry the scallops on paper towels well. They can't be moist if you want a good crust on them.
  • Season the scallops with the salt on both sides.
  • Lay down the oil on the griddle surface and let preheat.
  • Place the scallops onto the oil, flat side down.
  • Let cook for 3-4 minutes, or until a golden brown crust has formed on the scallop's surface.
  • Flip, ensuring the scallop gets turned onto an oiled surface to make sure it won't stick.
  • Let cook another 3-4 minutes, or until the other side is also browned.
  • Remove from the griddle and serve hot.
