How to make Smoked Beer Braised Corned Beef

225° is the target temperature. Fire up the smoker and get it preheating!

Open and pat dry the corned beef. Put it on the smoker and let it smoke for 3-4 hours, or until it reaches about 160°F internal temp.

Braise
Remove the corned beef from the smoker and place it into a Dutch Oven. Pour in two bottles of dark beer. Cover and let braise over medium-low heat for 2-3 hours, or until it is tender.

Remove from the braising liquid carefully when the roast is probe tender.

Any dark beer with a deep flavor profile will work. Guinness is an obvious choice. Using a Rauchbier or smoked porter would also be great options. You can use other dark beers like stouts or even a robust amber ale for the braising liquid too.
Can I make this recipe in a slow cooker or Instant Pot?
Absolutely! After the smoking portion, that is.
For a slow cooker, simply follow the recipe and cook on low for 8-10 hours or high for 4-5 hours, until the corned beef is tender. For an Instant Pot, set it to the “Meat” setting and adjust the cooking time to 90 minutes, making sure to release the pressure naturally once it’s done.

Smoked Beer Braised Corned Beef Brisket
Fire up the smoker! We're making a tender, delicious, smoked beer-braised corned beef brisket. Perfect for serving with cabbage, in soup, in a reuben, or in corned beef hash!
Ingredients
- 3 pound pre-brined corned beef brisket
- seasoning packet from corned beef
- 2 cans dark beer
Instructions
- Preheat your pellet grill and set it to 225°
- Remove your brisket from the brine and pat it dry with paper towels. Find and set aside the packet of spices that comes with the pre-brined brisket.
- Place the brisket directly onto the grates of your preheated pellet grill. Cook at 225° for 3-4 hours.
- Transfer the roast to a Dutch oven and pour two cans of dark beer over the top.
- Add your packet of dry spices to the top of the meat, cover the pot, and let simmer on medium-low heat on the stovetop for 2-3 hours.
- Check your brisket for tenderness before removing from the beer braise.
- Remove when tender and slice across the grain.
