Beef Protein Gravy Recipe

I've been a big fan of gravy for as long as I can remember. When I order something with gravy when I'm out, I ask for "obnoxious" amounts of gravy on my plate. My all-time favorite meal when I'm back visiting the Midwest, where I grew up, is a diner-style Hot Beef Commercial. AKA, the Hot Roast Beef Sandwich. That one consists of thinly sliced roast beef on white bread with gravy and mashed potatoes. I always sub in french fries, because if you're going to go…go all out.

But then in the 30s and 40s all of those kinds of choices caught up with me. That and a million other things, of course, but when my weight peaked in 2023, I knew I had to do something. Covid. My position being eliminated at my job. So many kids carried and parented. Whew.

Well, I did the thing and got on a GLP-1. Short story long, I have lost north of 100 pounds in the last 3 years, and I've not only known what a "protein goal" is, but I've had the ability to actually try and HIT one, too. That means making some smart swaps and finding way to pack in more protein into the things I know and love, because losing weight doesn't have to mean that you miss out on all the foods you enjoy.

For this recipe, I added 3 scoops of Naked Nutrition's Beef Protein Powder to my gravy mix, and it was perfect. It also took my gravy up to over 60 grams of protein in a 2 cup serving. Ummm, yes, please.

How To Make This Recipe

This is just the general overview so you can get an idea of what you're in for. Pictured, you see this beef gravy served with a braised pot roast. I braised the roast in this beef stock mixture along with an onion and some potato, too. That'll give you the best results, but this gravy will work even without that, too. I'm going to give you two sets of instructions here. One for gravy only, and one for this pot roast version.

Gravy-Only Instructions

  1. Add the water, beef bouillon powder (or Better Than Bouillon paste), kitchen bouquet, and beef protein powder to a small blender. Blend until fully combined.
  2. Add 1 tablespoon butter to a saucepan along with the onion. Let it saute for 4-5 minutes. Add in the beef stock mixture. Bring up to a simmer and let cook for 20 minutes.
  3. Make a cornstarch slurry and whisk into the simmering gravy. Reduce the heat to a slow simmer and continue cooking until thickened.

Pot Roast Instructions

  1. Add the oil to a Dutch oven. Season the chuck roast with the SPG blend. Brown on both sides over medium heat.
  2. While the roast is browning, add the water, beef bouillon, kitchen bouquet, and beef protein powder to a blender and blend until fully dissolved.
  3. Add the onion to the pan and let cook for a few minutes with the roast.
  4. Add the red wine to the pan and let simmer for 3-4 minutes.
  5. Add the potatoes along with the blended gravy mixture.
  6. Let simmer, covered, for 2-3 hours. Check regularly and add more water, as needed, to keep the gravy from reducing too much.
  7. Immediately before serving, remove the meat from the pot and whisk in the cornstarch slurry while the gravy is simmering. Cook, stirring constantly, until thickened. Serve hot with the potatoes and pot roast.

Why This Works

When Naked Nutrition sent me a couple of protein powders to try, I was really excited about this beef version. Even though I incorporate meat protein into almost every meal I eat, there's still a lot of room for pushing that up even higher, especially with a smaller appetite.

The Naked protein powder blends completely into the liquid, doesn't leave behind any unpleasant aftertaste, and is so easy to incorporate into a lot of everyday meals and sauces.

You might think that a beef protein isolate will be distinctly "beefy", but I was pretty surprised by the overall neutral taste of this powder on its own blended with water. It does have a bit of a beefy smell, but the actual flavor doesn't come through the way you think it will. I can't wait to try mixing this into my spaghetti sauce, alfredo, scrambled eggs, mac and cheese, and who knows what else I'll come up with.

Personally for me, I prefer the vanilla whey protein from Naked if I'm making a shake that's going to be on the sweet side, but a lot of people use this beef protein in shakes all the time, so don't let me talk you out of it.

Use This Gravy Hack With…

This is also a great recipe hack for beef soup base, for dishes like beefy noodles, beef stroganoff, and more!
