This Grilled Balsamic Chicken Pasta Salad has tender grilled chicken, crisp veggies, feta, and bacon, all tossed together in a tangy homemade balsamic dressing.
Ingredients
Chicken
- 1 pound boneless, skinless chicken breasts
- ½ cup olive oil
- ½ cup red wine vinegar
- ¼ cup balsamic vinaigrette
- 1 teaspoon black pepper

- 1 pound rotini pasta
- ½ cup chopped bell pepper
- ½ cup chopped cucumber
- ¼ cup thinly sliced red onion
- ½ cup feta cheese crumbles
- ¼ cup bacon bits
- ¼ cup crispy fried onions
- 1 tablespoon chopped fresh Italian parsley
Instructions
- In a small bowl, whisk together the olive oil, red wine vinegar, balsamic vinaigrette, and black pepper. Put the chicken in a shallow dish or a resealable bag, then pour the marinade over it. Let it sit for at least 30 minutes, or up to 2 hours in the refrigerator.
