My obsession with all things Greek Salad continues, but this time with a tangy, creamy twist. We picked up a new Mediterranean Blend from Spiva Cooking, mixed it with lemon juice, olive oil, and red wine vinegar, and then added some plain Greek Yogurt for a healthy alternative to traditional cream dressings.

I used this salad dressing recently in our Grilled Greek Meatball Bowl recipe on top of a big crisp green salad full of red bell peppers, artichoke hearts, Kalamata olives, cucumber, tomato, feta, and lettuce. It was the perfect addition, along with those hearty pork meatballs, also seasoned with that new, freshly ground Mediterranean blend we picked up.

This dressing is perfect to make a big batch of and use all week long. It also works well as a marinade for chicken breasts, or to dress your next pasta salad.
