Smoked beef roasts have been on the menu a lot here lately, and for good reason. They are simple to make, and you can use the beef in so many different things.

From a traditional medium-rare roast sliced thin and served next to some smashed potatoes or hasselback potatoes and some homemade rolls, to our Smoked Beef Stuffed Pepper Stew, the possibilities are endless when it comes to beef roasts.

We pick up our sirloin cap roasts at Costco, usually. They are readily available and usually a decent price too. You’ll notice that this is the same cut as the Picanha, but sirloin cap roasts don’t have the fat cap on them usually, where that’s a necessity with a picanha.

How to make Beef & Bleu Pita Wraps

Smoke your roast

Here is our recipe for an easy smoked sirloin cap roast. We like to make a couple of them and use the leftovers over the week for fast meals like this!

Slice it up

You want thin strips of meat in this sandwich, ideally. It’ll make it easier to eat. You can cut them into bite sized pieces if you’d like, but we prefer longer strips.

Heat your pita

No one likes a cold pita. Throw them on your griddle, grill, or on a sheet pan in a warm oven for a few minutes to let them warm up properly.

Stuff and eat

We like to eat ours with lettuce, tomato, bleu cheese, and an extra sprinkle of crumbled bleu for good measure. Extra points for making your own Bleu Cheese Dressing!

Smoked Beef and Bleu Cheese Wraps

Smoked Sliced Beef & Bleu Cheese Pita Wraps

These smoked sirloin cap roasts made perfect beef for our beef and bleu pita wraps! Easy for lunch or a weeknight dinner, even easier if you make some extra roasts over the weekend and hold some over for meals!

Total Time 10 minutes

Ingredients

  • 3 cups sliced smoked sirloin cap roast
  • 6 pitas
  • 3 cups shredded lettuce
  • 1/2 cup Bleu cheese dressing
  • 1/4 cup Bleu cheese crumbles
  • 1 cup sliced cherry tomatoes

Instructions

  1. Slice your smoked beef roast into thin strips against the grain.
  2. Heat up your pita breads on the griddle, stovetop, or in the oven. You could even do it in the microwave if you are in a pinch, but personally I like the slight crisping that happens on a flat top or cast iron pan.
  3. Load up your pita with sliced beef, lettuce, tomato, and bleu cheese dressing.
