These almond delights were sweet with a firm but tender crumb. They seriously surprised me how GREAT they are. My dear friend Dorene made these and brought them over for band practice and I knew I had to get the recipe and share with you all!

Almond Cookie Bars
If you’ve got almonds in the pantry and a craving for something sweet, these Almond Delights are going to be your new go-to. They’re buttery, tender, and packed with that nutty almond flavor that’s hard to beat. The edges get just the right amount of golden crunch, while the center stays soft and rich. They come together fast and are perfect for a last-minute dessert or a cozy weekend bake. Everyone who tries them wants the recipe—so you might want to double the batch if you're sharing.
This recipe is simple enough for beginners but still has the flavor and texture that seasoned bakers appreciate. It uses mostly pantry staples, so there’s a good chance you already have everything you need.
The almond extract gives these bars a sweet, floral flavor that really stands out. It’s balanced with a little vanilla and a touch of salt to keep things from going too sweet.

They’re great with coffee, perfect for bake sales, and always a hit at potlucks or family get-togethers. No frosting, no fancy layers, just straight-up flavor.
