Preheat

Fire up the griddle and preheat over high heat for 5-10 minutes.

Season

Pat dry your fish fillets and then season liberally with the Blackening rub and salt.

Cook

Put the oil down on the griddle and the fish on top of the oil. Lay the tortillas out on the griddle as well and flip after a minute or two so they warm but don’t get crispy.

Flip the fish after 3-4 minutes and cook on the other side. How long your fish will need to cook depends on how thick your fillets are.

Remove from the griddle, load up into the tortillas, and top with your favorite fixings!

The best way is to try not to have leftovers. Reheated fish will never be quite as good as the freshly cooked version.

What is the best type of fish to use for fish tacos?

The best type of fish is whatever you can get that’s the freshest. We love whitefish for this recipe and typically use Rockfish, Lingcog, or Halibut. More good options would be Tilapia, Mahi Mahi (Dolphin), or Haddock.

These refreshingly light and flavorful Blackstone Blackened Fish Tacos are the perfect way to celebrate your next taco night!

Ingredients

  • 2 pounds white fish (we used lingcod and rockfish)
  • 2 tablespoons Blackening seasoning
  • 2 teaspoons salt
  • 2 tablespoons oil
  • 24 corn tortillas
  • 2 cups fish taco slaw
  • 1 lime, for squeezing

Instructions

  1. Preheat your Blackstone over high heat.
  2. Pat your fresh fish fillets dry and then generously season with the Blackening seasoning and the salt.
  3. Put the oil down on the griddle and put the fish on top of the oil.
  4. Lay out all the tortillas on the griddle to warm also, if there's room on your griddle.
  5. Flip the fish after about 4 minutes, and cook for an additional 3-4 minutes on the other side. (If your fish is less than 3/4"-1" thick, it'll take less time to cook. Keep that in mind!)
  6. Remove from the griddle and load into your tortillas. Top with the fish slaw and enjoy while hot with limes for squeezing.
