When you need a fast, delicious, beefy recipe to serve that also isn’t going to break the bank, a London Broil is the perfect solution. This versatile, inexpensive cut of meat is marinated overnight in our spicy, Korean-inspired marinade heavy on the gochujang, and then grilled over high heat in our pellet grill until it reaches a perfect medium-rare. Then, we rest it and slice it across the grain for a super tender beef roast that can go alongside any number of meals!

What is a London Broil?

You might be surprised to learn this if you are in the US, but “London Broil” is actually a cooking method and not an actual cut of meat. Crazy, since if you walk into your local grocery store chain right now you’ll likely find some roasts in there labeled “London Broil”.

A London Broil (the method) is a roast or steak that’s been marinated overnight and then is broiled in the oven until it reaches your desired finished temp. For us, that’s medium-rare. You do you, though.

A London Broil (the thing you can buy in the grocery store with a label that says “London Broil” on it) is typically going to be from the flank or top round portion of the beef. You can use other cuts of steaks with this method, however, so feel free to experiment! This marinade is great for chicken and pork chops too.

Where’s the best place to buy a London Broil?

The best place is at your local grocery store! These are very common cuts of meat, and you should be able to find them about anywhere.

Mix your marinade

Combine all the marinade ingredients and throw the roast in. Refrigerate, and let it marinate for at least 6 hours, but overnight is best.

Preheat your grill

Quick and fast is what we’re after! It is a London “broil” after all. So, crank the heat up to high and make sure that it’s above 400°.

Grill it

Pat your steak dry and season liberally with salt and pepper. Put the steak on the preheated grill and cook for 7-10 minutes per side, or until the internal temperature reaches your desired level of doneness. (See the chart below.)

Rest & Slice

Let the London Broil rest, tented, for 10-15 minutes. Slice across the grain and serve hot.

How do you store leftovers?

Store leftovers in an airtight container in the fridge for 3-4 days. You can also freeze, if desired, into individual portions.

What’s the best way to reheat leftovers?

The best way to reheat steak depends on what sort of thing you’ve been using it in. If you’re mixing it into something, just let the heat of that warm the steak again. Pan frying is also great, as is sous vide if you have one!

Are there any substitutions for black vinegar?

Yup! You could sub in white vinegar or apple cider vinegar, or even rice wine vinegar in the marinade. It’ll impact the flavor some, but it’ll still be delicious!

Traeger Grilled London Broil

Our easy Traeger Grilled London Broil recipe features my favorite steak marinade, and is so easy to make! We do this one "hot and fast" style, and cook until the roast reaches medium-rare.

Cook Time 20 minutes
Marinate Time 12 hours
Total Time 12 hours 30 minutes

Ingredients

  • 1 - 2 pound London Broil
  • salt & pepper

Marinade

  • 1/2 cup tamari
  • 1/4 cup black vinegar
  • 6 ounces pineapple juice
  • 1 tablespoon gochugaru
  • 2 tablespoons minced garlic
  • 1/4 cup olive oil

Instructions

  1. Mix together the marinade ingredients in a large sealable plastic baggie or other contain that can be covered. Put the roast in, and refrigerate overnight.
  2. Preheat your grill to 400°+. Dry off your roast, season liberally with salt and pepper, and then toss it on the grill.
  3. Grill it for about 7-10 minutes per side, or until the internal temp reaches your ideal level of doneness. We prefer medium rare, so pull our steaks and roasts at about 125° before letting them rest.
  4. Let the London Broil rest for 10-15 minutes, tented, before slicing against the grain.
