  • 1 pound ground beef
  • 1 pound shredded Mexican blend cheese
  • 1 can Mexican stewed tomatoes
  • 1 pound elbow macaroni
  • 3 tablespoons chili powder
  • ½ teaspoon cumin
  • 1 teaspoon salt
  • 1 teaspoon onion powder
  • ½ teaspoon garlic powder
  • 1 cup reserved pasta water

Instructions

  1. Bring 3 quarts of water to a boil in a large stock pot. Add the macaroni once the water is boiling and cook according to the package directions until al dente.
  2. Drain the noodles, reserving 1 cup of the pasta water.
  3. While the pasta cooks, place a large grill-safe skillet over medium heat on the stovetop and cook the ground beef until browned. Drain the fat.
  4. Stir in the tomatoes, salt, onion powder, garlic powder, chili powder, cumin, and reserved pasta water. Bring to a simmer and cook for 10 minutes.
