When I go out to Mexican, if they don't have those platters of fajitas that sizzle and smoke all the way to the table and make a whole spectacle out of themselves, I don't want 'em. The smell, the experience, all of it. I'm here for it. But...I don't always want to spend $24+ on one plate, plus drinks, tax, tip, and forget it if the rest of the family is with me. That's half a week of groceries down the drain for one meal. Lately we've been saving those food dollars and limiting our eating out to special occasions (or quick lunches with just my husband and I), but that doesn't mean I don't still get a hankering for those fajitas.
It turns out fajitas are pretty simple to make at home. I may not have that smokey, sizzling platter coming at me, but I can have all the rest of it, and for a fraction of the cost.

- Steak - We prefer flank or skirt steak, but any well-marbled steak will work!
- Onion - I like using yellow onions or sweet onions, but white onions are more traditional. Follow your heart.
- Bell Peppers - Personally (and I'm in the minority) I think that green peppers should be illegal, so I use yellow, orange, and red only.
- Fajita Seasoning - You can use a pre-made store-bought seasoning blend, or whip up one of your own. My Homemade Taco Seasoning works well, and so does my Spicy Pork Rub (pick up a jar! It is good on more than just pork!)
- Oil - Avocado oil is the best for fajitas. It has a high smoke point and neutral flavor.
- Tortillas - Corn or flour, but make sure to heat them up in a skillet before serving.
- Fixings - Sour cream, avocado, and guacamole all are great here. I like some chopped cilantro, too.

How To Make This Recipe

- Prep - Slice your steak, onions, and peppers. Get your tortillas heated and put into a tortilla warmer or wrap in foil and place in a warm oven.
- Season - Season your steak liberally and make sure all the pieces are well-coated.
- Cook Steak - Put a large skillet over high heat on the stovetop. Cast iron works really well for fajitas, but a non-stick will work, too. Let it preheat for a couple of minutes, and then add the oil. Once the oil gets hot and shimmery, add the beef.
Cook until browned, but not cooked all the way through. Remove to a platter and cover with foil to keep warm. - Cook Vegetables - Next, cook the vegetables until they are crisp-tender.
- Enjoy - Put everything on a big platter and set your family lose!

Stovetop Steak Fajitas
We love a good steak fajita, and this recipe is fast, easy, and tastes amazing!
Ingredients
- 3 pounds steak*
- 2 teaspoons salt
- ½ teaspoon pepper
- 2 tablespoons Fajita seasoning, divided
- 3 bell peppers, multi-colored
- 1 large onion
- 3 tablespoons avocado oil
- tortillas, of your choice

Instructions
- Slice your steak into thin strips again the grain. Season with salt, pepper, and 1 ½ tablespoons of the Fajita seasoning.
- Heat your tortillas in a skillet and wrap tightly in foil. Place into a warm oven until the fajitas are done.
- While your steak is sitting, slice your vegetables and season with the remaining Fajita seasoning.
- Preheat your skillet over high heat for a few minutes. Add the oil and spread it out evenly before adding your meat to the skillet.
- Cook the steak, flipping occasionally until it is at your desired level of doneness. Remove to a platter and cover with foil.
- Add the vegetables to the pan and a little more oil, if needed. Cook until tender-crisp.
- Put everything on a big platter and let your family assemble and enjoy with your favorite fixings.
Notes
Steak options:
We prefer flank and skirt steak for fajitas, but there are a lot of different options that work. Sirloin, flat iron, and new york strip are all good options!
Fajita seasoning:
If you don't have the called-for fajita seasoning on hand, your favorite brand will do! If you'd rather mix up your own blend, I suggest using a combination of chili powder, jalapeno powder, salt, pepper, garlic powder, and onion powder.
