This easy cheesy rotini bake is one of my favorite meals to make for the family! Whether you make the sauce from scratch or use a jarred sauce, this is a great weeknight meal and is perfect for meal-prep too.

Ingredients

Sauce

  • 1 pound lean ground beef
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • 3 cloves garlic, minced
  • 1 small yellow onion, diced
  • 2 tablespoons extra virgin olive oil
  • 28-ounce can San Marzano Tomatoes
  • 15-ounce can crushed tomatoes or tomato sauce
  • 1 tablespoon Italian Seasoning (lightly dried Gourmet Garden)
  • ½ teaspoon sugar (optional)
  • ½ teaspoon baking soda (optional)

The Rest

  • 1 pound rotini pasta
  • 4 cups shredded mozzarella cheese
  • 1 cup shredded parmesan cheese

Instructions

  1. Add the ground beef, seasonings, garlic, and onion, to a large high-sided skillet or pot over medium-high heat. Brown the meat and drain off any excess fat at the end.
  2. Add the olive oil to the ground beef along with the tomatoes. Reduce the heat to medium / medium-low and bring to a simmer. Add the Italian seasoning, along with the sugar and baking soda, if using. Let the sauce simmer while you prepare the rest of the ingredients.
  3. Put a pot of well-salted water on the stove to boil. Preheat your oven to 350°F.
  4. When the water comes to a boil, cook the pasta 2 minutes less than what the package calls for on the low end. You want them slightly under al dente. Drain.
  5. Mix the pasta and the sauce and place into a large baking dish. Top with the mozzarella and parmesan cheese, and put in the oven.
  6. Let bake for 20-30 minutes, or until everything is hot, bubbly, and the cheese is melted.
  7. Serve hot with your favorite sides. We like garlic bread and a nice caesar salad with ours.
