Combine all of the marinade ingredients in a blender and blend until smooth.
Add to a large baggie along with the flanken short ribs and let marinate overnight.

Are there any substitutions?
I haven’t tested this recipe with any substitutions, but marinades are usually pretty forgiving. If you want it less sweet, reduce the brown sugar a bit. If you want it more spicy, add some more gochujang or some Korean chili pepper threads.
How should you store the leftovers?
Store these in an air-tight container in the fridge for 2-3 days.
How do you reheat the leftovers?
Personally, while you can get a decent recent in the microwave with these, I’d actually recommend tossing them back on the grill or heating in a pan on the stovetop with a little oil. You’ll be able to better control the final result without overcooking.
What’s the best side dish to serve with Grilled Galbi?
I love banchan, which are basically small-plate appetizers, and this Cucumber Kimchi would be perfect with this dish. So would some Japchae, which is a Korean noodle dish featuring glass noodles, vegetables, and protein like chicken, pork, or shrimp, mixed with a sweet sauce.

Galbi is a delicious Korean BBQ dish made with marinated short ribs that is grilled perfectly, offering a unique blend of sweet, savory, and smoky flavors.
Ingredients
- 3 pounds flanken short ribs
Marinade
- ⅓ cup soy sauce
- ⅓ cup brown sugar
- ⅓ cup mirin
- 1 tablespoon toasted sesame oil
- 1 teaspoons black pepper
- ¼ teaspoon gochujang
- 1 medium onion, peeled and chopped
- 6 cloves garlic
- 1 tart apple
- 2 teaspoons minced ginger
Instructions
- Combine all of the marinade ingredients in a blender. Blend until smooth.
- Pour over the flanken short ribs in a large baggie. Let marinate overnight.
- Preheat your grill to 425°- 450F.
- Lay out the flanken short ribs on the hot grill and cook for 2-3 minutes per side.
- Remove from the grill and serve with steamed rice.
