Viral TikTok Dumpling Bake
I used to be such a hater when it came to social media. I'm not super visible there, at the moment, but I do my fair share of scrolling, and viral recipes are always so fun! This Dumpling Lasagna was delicious, and if you've haven't tried our famous Smoked Cream Cheese or this simple Feta Pasta, you're seriously missing out.
This dumpling bake was so easy to make, I had all of the ingredients in my fridge and pantry, and came together in about 40 minutes. Now...a word of warning. This is only for coconut curry fans. I, personally, am not the biggest curry fan, so stay tuned for another version of this with a slightly different flavor profile, but if you love Thai red curry, you're going to be obsessed with these Coconut Curry Dumplings.
Why You'll Love This Dish
- SO fast and easy - This recipe gets tossed together in about 5 minutes, then the Traeger does the rest of the work. Doesn't get more simple than that!
- Big flavor - There's nothing subtle about the flavor of this sauce. It is big, bold, and you'll want extra rice just so you have something to drizzle it onto.
- Versatile - Change-up the sauce and vegetables according to what you have on hand.

How To Make This Recipe
This is just the overview so you can see what you're actually getting into here. When you are cooking, you'll want to use the full recipe at the bottom of the page.
- Preheat & Organize: Preheat your Traeger to 400°F. If you're making these in the oven, use the same temperature and timing. Grab a large 10x13-inch high-sided baking dish that's safe for the grill, so the sauce has plenty of room to bubble around the dumplings.
- Prepare Sauce: In a medium bowl, whisk together the coconut milk, water, Thai red curry paste, garlic paste, ginger paste, soy sauce, honey, chili garlic sauce, fish sauce, rice wine vinegar, and sesame oil until smooth. Pour the sauce into the baking dish and spread it out evenly.
- Add Dumplings & Zucchini: Arrange the frozen dumplings flat-side down in the sauce. Spoon a little sauce over the tops so they stay moist and pick up flavor right from the start. Slice the zucchini into rounds or half-moons, then scatter them across the pan.
- Cook: Cover the dish tightly with foil and place it on the grill. Cook for 20 minutes, then carefully remove the foil. Return the dish to the grill and cook for another 15 to 20 minutes, until the dumplings are lightly golden on top and the sauce has reduced slightly.
- Garnish & Enjoy: Take the pan off the grill and finish with chili oil, green onions, sesame seeds, and cilantro. Serve the dumplings hot with plenty of sauce spooned over each portion.

No. Start with frozen dumplings straight from the package. That helps them hold their shape in the sauce and keeps prep simple.
Pork, chicken, shrimp, or vegetable dumplings all work well here. Choose a style that can hold up to baking in sauce, such as potstickers or gyoza.
Transfer leftovers to an airtight container and refrigerate for up to 3 days. Keep the dumplings and sauce together so they don't dry out.
Reheat in a covered baking dish at 350°F until warmed through, or microwave individual portions in short intervals. Add a splash of water or coconut milk if the sauce has thickened too much.
You can mix the sauce up to 2 days ahead and store it in the fridge. When you're ready to cook, pour it into the dish, add the frozen dumplings and zucchini, and bake as directed.
Yes. Bell peppers, snap peas, broccoli, or thinly sliced carrots are all good choices. Pick vegetables that cook in about the same amount of time so the pan finishes evenly.
It has a gentle kick from the red curry paste, chili garlic sauce, and chili oil. For a milder pan, cut back on the chili garlic sauce and skip the chili oil at the end.
