Frozen drinks are pretty much my favorite thing in the summertime, and when I can incorporate fresh fruit into the mix – that’s even better. I’ve served up a fresh cherry pina colada here on the site before, an old-fashioned pina colada, and this triple berry sipper, but never before has frozen raspberries turned something so simple into something SO awesome.

All this drink requires is a blender and some willpower to share some of it with your friends, because otherwise you’re going to want to just find a sunny quiet spot and kick back and enjoy.

I used some frozen raspberries from last year’s harvest in this drink, but you can use fresh if you’d prefer. I would definitely recommend freezing them first though, as that is what gives this drink it’s awesome frozen texture. In fact, if you really want to get crazy I would also suggest freezing the pineapple juice into ice cubes too. 😉 Totally optional, but totally amazing.

Ingredients

  • 2 cups frozen raspberries
  • 2 ounces coconut rum, chilled
  • 2 ounces coconut cream
  • 4 ounces pineapple juice, chilled

Instructions

  1. Add all ingredients into a blender, and blend until smooth.
