Air Fryer Halibut Scampi
Halibut is on the menu at most high-end restaurants for a reason. It is delicious, has amazing texture, is mild-flavored but works so well in so many different applications. If you’ve never had our beer batter, try it the next time you want fish and chips with some fresh halibut and wait for your life to change.
We love halibut so much, in fact, that we spend considerable time, money, and effort getting out there on the ocean off of the coast of Washington state to catch our very own. If you’ve never tried truly fresh, never-frozen halibut just hours out of the water, put it on the bucket list. It is worth the wait.

How to make Air Fryer Halibut Scampi

Cube the fish
Cube up your fish into 1 – 1 1/2 inch cubes.

Scampi
Use a little baking dish, or make a little tin foil baking dish yourself. Put the fish in. Pour the melted butter over the top, the toss in the sliced garlic, and then sprinkle the fish with your seasonings. Pour the white wine and squeeze the lemon into the pan too for good measure.

Air Fry
Put the whole thing in your airfryer and cook on high (400-425°) for about 10 minutes.

Enjoy
Serve with toothpicks or cocktail skewers and enjoy!

How do you store leftovers?
This is fish, so try not to make so much that you have leftovers. If you do, toss them in a storage baggie or in an airtight container.
What’s the best way to reheat leftovers?
Again, leftover fish isn’t the greatest idea, but if you do wind up with some and want to chance it, putting it back in the airfryer is probably best.
Can you use other types of fish in this recipe?
Yes! We used halibut here, but any firm whitefish will work. We’ve also used seabass, lingcod, swordfish, etc.

Air Fryer Halibut Scampi
This simple halibut recipe borrows all the flavors of your favorite shrimp scampi, and utilizes your air fryer!
Ingredients
- 12 ounces fresh Halibut filet
- 2 cloves fresh garlic
- 2 tablespoons butter
- 1 tablespoons olive oil
- 3 tablespoons white wine
- 1/2 teaspoon salt
- 1/2 teaspoon Old Bay
- 1/2 teaspoon Traeger Fin n feather (optional)
- 1 tablespoon lemon juice
Instructions
- Make a tin foil tray that is the size of your air fryer.
- Cube the fish into 1 - 1 1/2 inch pieces and place into the air fryer. Pour in the melted butter and olive oil. Toss the basket gently to coat the fish.
- Sprinkle the seasonings over the top of the fish.
- Pour in the wine and squeeze in the lemon juice. Put into the air fryer at 400-425° for about 10 minutes.
- Enjoy!

The name is a little deceptive. Scampi means large shrimp or prawns. I thought this was going to have shrimp and halibut bites in it. But fun recipe nonetheless….

Right, in Italian it definitely means that, but in the US it has evolved to mean more of a type of dish with garlic and butter being heavily featured flavors. You are welcome to toss some shrimp in there with the halibut though!
