Arrange pork ribs on a tray or sheet pan. Season all sides evenly with the rub.
Place ribs directly on grill grates. Smoke for 2 hours.
Remove ribs from grill and transfer to a grill-safe pan. Pour BBQ sauce over ribs, coating thoroughly.
Cover pan tightly with aluminum foil. Return to grill and cook for 1–2 additional hours.
After 1 hour, check ribs for tenderness with a fork. If not tender, reseal and continue cooking, checking every 20 minutes until desired doneness is reached.
