Preheat your pellet grill to 200°, sprinkle the rack of lamb with the Mediterranean seasoning, and place your lamb on the grill.
Place the lamb on the grill and smoke for 1 hour.
Turn up the grill to 400°F.
Continue cooking until the internal temperature reaches 145°F, turning over a few times during the cook. It should take about 15-20 minutes, but this will depend on the size of your racks, the external temperature, and how often you open your grill during the cooking process.
Remove from the grill and let rest for 10-15 minutes before slicing.
