Cooking large meals is always a challenge. I get it. You don’t have a lot of time, but you want what you serve to still be tasty. If you find yourself in this boat, I’ve got a go-to meal for you. So, whether you’re cooking for a crowd, or you have a large family like me, sheet pan chicken fajitas are the way to go.
Preheat your Traeger grill (or oven) according to manufacturer directions to 450.
Mix together oil and seasonings. Toss with the chicken and the peppers.
Line a large sheet pan with non-stick foil, and place on your pre-heated Traeger grill (or oven). Let the pan heat for about 10 minutes inside of the grill (or oven).
Open the grill and place the peppers and vegetables onto the pan in a single layer. Shut the grill and cook for 8 - 10 minutes, or until chicken is no longer pink.
Remove carefully from the grill, and serve with warm tortillas and all of your favorite fixings!
