Ingredients
4-5medium red potatoessliced
1/2package garlic and herb dressing mix
3cupsshredded cheese
3/4 - 1lbbaconchopped and pan fried
1/2cupranch dipthinned slightly with milk
Instructions
Preheat oven to 400° F. Line a baking sheet with parchment or non-stick foil. Brush lightly with olive oil. Put a large pot of well-salted water on to boil.
When the water is nearly boiling, slice the potatoes about 1/8 inch thick and boil for 4-5 minutes. Gently drain and let cool until they are comfortable to handle.
Layer on baking sheet with only tiny overlaps, and lightly sprinkle with Garlic & Herb dressing mix. Bake for 10 minutes.
Remove from oven and top with cheese and bacon. Bake an additional 5-10 minutes, or until cheese is melted and bubbly and potatoes are cooked through.
Serve with ranch dip that's been slightly thinned with milk.
