Pan-Fried Potato Wedges

Pan Fried Potato Wedges are a simple side dish that is perfect with a big juicy steak, a big pile of eggs, a whole roasted chicken, or whatever other main course you can throw at them. Family favorites, and with a secret trick to ensure they cook fully in less time.

Simple is the best way to describe these potatoes. Well seasoned red potato wedges are pan fried in a little canola oil until they are crispy out the outside, and tender in the middle.

Potatoes are one of my favorite foods, and pan-fried wedges are a simple side dish that will go with just about anything.

What type of potatoes should you use for wedges?

You can use any kind of potatoes for wedges, but I really like to use red or yellow potatoes for these. They aren’t as prone to breaking apart as a russet.

That being said, any kind of potato is better than NO potatoes, so if you only have russet potatoes laying around don’t let that stop you!

How can you make the potatoes cook faster?

The key to making great potatoes on the stove-top is to par cook them first. Some people like to boil them, but I prefer to use the microwave. 

The microwave will cook them enough, but not too much. They also won’t absorb any water during the process either, so it helps them get that crunchy exterior that potato wedges are known for, but without breading. 

How long you need to cook them in the microwave depends on the power of your microwave and the size of your wedges. Cook them in 1:30 – 2:00 minute spurts until you can poke a fork into them, but there’s still some resitance.

Hopefully you have most of this stuff in your pantry already, but if not, get thee to a store and pick up some:

  • 1-2 pounds of medium red potatoes
  • salt
  • pepper
  • garlic salt
  • onion powder
  • oil (canola or avocado work best for this)

Can you cook these on the grill?

You sure can! Preheat a cast iron pan with your grill on high heat in the 400-500° range, and after the par-cook, drying, and seasoning you can toss them right into the hot pan with some oil 

Check the potatoes every 5 minutes and flip as necessary to make sure both cut sides get browned and crisp.

If you don’t have a cast iron pan, you could also lay down a thick layer of non-stick foil and place them on that to cook.

What can you serve with Pan-Fried Potatoes?

Potatoes are great with almost any main dish, but here are a few of my favorites that I think you’ll really love. 

Whole Traeger Grilled Chicken – One of my most popular recipes, and a family favorite! Roast chicken is a traditional hearty meat-and-potatoes meal that’s an easy regular on the rotation. 

Foil Packet Salmon – You can cook this on a gas or charcoal grill if you don’t have a pellet grill, I won’t be mad at ya, and neither will the fish. Just make sure not to overcook it!

Filet Mignon – The king of steaks needs to be served with some killer sides, and this one is definitely worthy.

Smoked Juicy Lucy Burgers – Burgers and fries, fries and burgers, there are no better partners than these two classic dishes.

These easy pan-fried potato wedges are crispy on the outside and perfectly fluffy in the middle. Take your time and whip up a batch of these with your next dinner!

Cook Time 15 minutes
Total Time 20 minutes

Ingredients

  • 4 large red potatoes, washed and cut into wedges
  • 1/4 teaspoon salt
  • 1/2 teaspoon seasoning salt
  • 1/2 teaspoon garlic salt
  • 1/2 teaspoon onion powder
  • 1/4 cup canola oil

Instructions

  1. Place the potatoes on a microwave-safe plate, and cook on high power in the microwave for 3-4 minutes.
  2. Preheat oil over medium heat in a good-quality nonstick pan.
  3. Season potatoes well, and the place in a single layer in the pan. Cook on one side without turning until it is golden brown and crispy. Flip potatoes and repeat on the other side.
  4. Remove from pan and serve hot.
