Can you believe that it is almost the end of August already? Summer is a mere two weeks from being over now, or at least what I consider summer, and it is very bittersweet. This year all four of my boys will be off to school! FOUR KIDS in school? What? That’s insane talk to me. Back when I was in the thick of it and my oldest was only 5, I couldn’t imagine what it would be like to even have ONE kid in school. Now this year I will have four. Crazy times!
We are going to enjoy these last few weeks of summer vacation to the fullest, and I hope you do too.
This Pineapple Watermelon Slush was such a hit and a great way to cool down when the weather is hot. There is NO added sugar in this, and it was perfectly sweet.

Cube up some watermelon to start. I like to remove all the rind from my melons before slicing them, but it isn’t necessary. As long as you end up with rindless chunks at the end, you can cut up your melon however you want.
Put some crushed ice in your blender.
Top with an equal amount of watermelon, and then about a cup of pineapple juice to hold everything together. Blend until the ice is pulverized.
Pour and serve!
If you are in the mood for an adult beverage, this Pineapple Bacardi was fantastic in it. I love those little bottles. Perfect for a single-serve cocktail every once in a while.
This would be even more delicious with fresh pineapple blended in it. You could even use canned pineapple. I just happened to have pineapple juice on hand when I made this! I love slushy recipes because the possibilities are endless.
- 2 cups crushed ice
- 2 cups cubed seedless watermelon
- 1 - 2 cups pineapple juice
- Add ingredients to blender.
