Yes, banana bread, in muffin form. Not revolutionary, by any means, but one of my favorites. We have eaten our weight in banana bread in the last 24 hours, and it was WORTH it!

This recipe for banana bread muffins can also be made in traditional loaf pans, or in a bundt cake pan. It is moist, delicious, and SO simple to make. Check out my Cinnamon Swirl Banana Bread for another option!

This one recipe made a dozen muffins, 8  stocking-shaped muffins, and one loaf. So, it is great for a crowd!

How to make homemade banana bread muffins

This is just the overview so you can see what you’re actually getting into here. When you are cooking, you’ll want to use the full recipe at the bottom of the page.

Preheat

Preheat your oven to 350°F.

Prep

Prep your muffin tins with either paper liners or baking spray.

Mix

Dump the all the ingredients besides the cinnamon sugar into your mixer, or mixing bowl.

Now mix until fully combined, and pour into your desired shape of baking pan.

Bake

Bake at 350°F for 15-20 minutes, or until golden brown and a toothpick that is inserted comes out clean. (Ovens vary wildly as far as actual baking time goes!)

Enjoy

Let cool, remove from the pan, and enjoy! Store in an airtight container. It’ll last longer in the fridge, but the counter is fine. These never last longer than a couple days in my house anyway.

Can these be made in advance?

Yes! This is a great recipe to make ahead of time for lunch snacks, gifts for friends and family, or an easy breakfast on-the-go.

Substitutions and Variations

Some of my favorite add-ins to this are cinnamon sugar, fresh berries, chocolate chips, or chopped nuts. For the cinnamon sugar, I lightly sprinkle the tops of the muffins before baking.

If I am making a loaf, I will pour 1/2 the batter into the pans, sprinkle with cinnamon sugar, top with the remaining batter, then sprinkle again with the cinnamon sugar. It is delicious. The nuts or berries or chocolate chips can just be gently folded into the batter after it has been mixed.

Cook Time 15 minutes
Total Time 25 minutes

Ingredients

  • 1 cup white sugar
  • 1 cup brown sugar
  • 1 cup vegetable oil
  • 4 eggs
  • 5 bananas, extra ripe
  • 1 cup sour cream
  • 1 TBSP vanilla
  • 2 tsp baking soda
  • 3 cups flour, all purpose

Instructions

  1. Toss all ingredients into your mixing bowl, and mix until well combined. About 2 minutes.
  2. Pour batter into greased muffin tins, and bake at 350 for about 15 minutes, or until golden brown and a toothpick test comes out clean.

This looks great to make with my middle school culinary class! My only question is that you mention cinnamon sugar in your description, but it doesn't appear anywhere in the actual recipe. Is it just a topping?

Hi Lauren! The cinnamon sugar is optional, and is just white sugar mixed with cinnamon. You can use whatever ratio you prefer. I like to use about a 1/2 - 1 teaspoon of cinnamon per 1 cup of granulated sugar. Happy baking!
